Last week I was reading my Twitter feed and found a recipe on Etsy's page for summer salsa.
Holy cow.
I picked up my fresh ingredients at the Salt Lake Farmer's Market on Saturday, then set right to work on the salsa when I got home so it would have time to rest and distribute its flavors. I love that the salsa includes both cherries and peaches -- not to mention lime juice. Isn't that the most heavenly scent on earth?
Summer Salsa
Makes about 2 cups
1-2 tomatoes, roughly chopped
1 red onion, roughly chopped
1 jalepeño, deseeded and thinly chopped
2 cloves garlic, finely chopped
Juice of 1 lime
Salt and black pepper to taste
1 cup cherries, roughly chopped
1 peach, sliced*
Combine all ingredients and let sit for a few hours, up to overnight.
*I was a little impatient for the salsa, so my peach wasn't quite ripe enough. I added about a tablespoon of sugar to sweeten it up, which worked, but I really don't recommend it. Let your peach ripen first so you can enjoy its full flavor.
