Fourth of July dessert
This Sunday is Independence day, so what better way to celebrate than with a freedom sundae? It's a pineapple, coconut, blueberry and strawberry delight! Ok I just looked it up and I lied. It's not a sundae because as dictionary.com says a sundae is, "ice cream served with syrup poured over it, and often other toppings, such as whipped cream, chopped nuts, or fruit." Mine has no syrup, but that is not to say yours couldn't! I'm keeping the name though because it's too cute to resist. I promise you will forgive me when you eat it. This sundae will truly set you free. Why? First of all it frees your time because it's a beautiful, festive dessert that is fast, easy and can be made in advance. Second because with sherbet and fresh fruit, it frees up your calorie count (which I'm sure you will spend wisely on hot dogs, hamburgers, chips and any other assortment of sins you have planned). So celebrate your independence this Fourth of July and save room for dessert!  

{freedom fruit sundae}

pineapple sherbet
shredded coconut
strawberries or raspberries

Place shredded coconut in a small bowl. With an ice cream spoon, scoop out a ball of sherbet. Making sure it's round, roll the ball in the coconut until completely covered. Place in a glass or bowl (I love to use martini glasses for desserts). Set in the freezer for at a couple minutes, or if prepping in advance, until ready to serve. Top with fresh blueberries and strawberries and enjoy.
