Focaccia pizza with roasted tomato basil sauce, spicy pepperoni, grated mozzarella and Parmesan and fresh herbs--sounds so gourmet doesn't it? But honestly, the best part about this entree is how incredibly easy it is. Apart from the focaccia, these are all ingredients that I had right in my kitchen without an extra trip to the store. When you're craving pizza it's so easy to say, let's just order out, but this pizza may keep you in for the night.

One loaf focaccia bread (I used a sundried tomato loaf)
12 ounces tomato sauce (I like the Classico tomato basil available at Costco)
Spicy pepperoni
Grated mozzarella cheese
Grated Parmesan cheese
Thyme, basil and oregano (I got mine fresh from my herb garden)

Add any additional ingredients you want or feel free to change. This would be fabulous with chicken, spinach and Alfredo sauce.

The directions are almost too simple to share. Spread the sauce, followed by cheese and other toppings. Place on a baking sheet and cook for about 10 minutes at 350 degrees or until the cheese bubbles. Enjoy!
