The boyfriend and I have started a new hobby of making our own homemade pizzas from scratch. Every few Friday nights we make a dough and top it with amazing, fresh ingredients. We've tried the classics, such as a pizza margherita (writing about that would get me started on my love affair with basil, so I'll save it for another day). However, the pizza we ALWAYS return to is the BBQ chicken. BBQ sauce, chicken, smoked mozzarella, fresh red onions, and cilantro. I mean, what could be better?
Perhaps revisiting those ingredients for another meal a few nights later? I call that a win! And you can call it this week's double feature recipe. Hope you enjoy.
BBQ Chicken Pizza
Ingredients
- 1 chicken breast, cut into strips and cooked through
- 1-1 1/4 cups BBQ sauce (I HIGHLY recommend any variety of Sweet Baby Ray's, one of life's greatest finds)
- 1/2 red onion, chopped
- 1/2 bunch cilantro, chopped
- 1/2 lb smoked mozzarella
- Preheat oven to 450 degrees. If you are using a pizza stone you can up the temperature to 500 degrees and preheat your stone in the oven.
- Shape your pizza dough into desired shape/thickness. I like a thicker crust, but this pizza would still be delicious on thin. Don't have a favorite dough? I like to use this Wolfgang Puck recipe when I'm pressed on time. It doesn't require as much rising as other crusts we've tried.
- Spread the desired amount of BBQ sauce, followed by mozzarella, chicken, onion, and cilantro.
- Bake pizza 12-18 minutes, or until the cheese is melted and bubbling, and the entire pizza is deliciously browned.
BBQ Chicken Wraps
It's always nice to have a back-up recipe to use up that extra onion, cilantro, and sauce. I had some mild cheddar and minced garlic in the fridge, so all I had to buy was more chicken and tortillas. Simple!
Ingredients
- 1-2 large chicken breasts, cut into cubes
- 1-2 cups BBQ sauce (adjust to your taste)
- 1/2 red onion, diced
- 1/2 bunch cilantro, chopped
- 2 tablespoons olive oil
- 1 small clove of garlic, minced
- Mild cheddar
- Tortillas
- Salt and pepper to taste
- Warm olive oil on medium heat in a large skillet. Add the onion and sweat until transparent, about 5 minutes. Add garlic and saute about 20-30 seconds.
- Add chicken to onion, garlic, and oil. Salt and pepper, and cook through.
- When chicken is done, reduce heat and add BBQ sauce. Coat chicken. Remove from heat and add cilantro.
- Warm tortillas, then add cheddar and chicken mixture. Wrap and enjoy.
