pineapple sherbet
shredded coconut

strawberries or raspberries
Directions
Place shredded coconut in a small bowl. With an ice cream spoon, scoop out a ball of sherbet. Making sure it's round, roll the ball in the coconut until completely covered. Place in a glass or bowl (I love to use martini glasses for desserts). Set in the freezer for at a couple minutes, or if prepping in advance, until ready to serve. Top with fresh blueberries and strawberries and enjoy.
