I'll admit it. When I get excited about autumn cooking I'm usually most excited for pumpkin (as you can see from here and here), most likely since that is really the main time of year I get to eat it. But I do recognize there are some people (like my brother for instance) who don't like pumpkin. Here's a yummy, autumn coffee cake that's great for dessert or breakfast with a cup of joe.

{Apple Cinnamon Coffee Cake}

Ingredients
Topping:
1/2 cup grated apple
1/2 cup quick oats
1/4 cup brown sugar
1/2 teaspoon cinnamon

Batter:
1 3/4 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon cinnamon
2 egg whites
1/2 cup brown sugar
3 tablespoons vegetable oil
4 tablespoons milk
1 cup applesauce
1/2 teaspoon vanilla

Directions
Preheat oven to 350 degrees. Coat a 4 cup bundt pan or an 8 inch baking pan. Combine shredded apple, oats 1/2 teaspoon cinnamon and brown sugar in a large bowl and stir. Evenly spread topping into the prepared pan. In a separate bowl combine flour, baking powder, baking soda and 1 teaspoon cinnamon. In original bowl, combine egg whites, brown sugar, oil, milk, applesauce and vanilla and blend. blend dry mixture into wet mixture, making sure to not over beat. Pour into baking pan over the topping. Bake for 30-35 minutes or until a fork comes out clean. Cool for at least 10 minutes and sprinkle with powdered sugar.
