Today was a longer day than usual. I had a volunteer opportunity after work that was due to end around 7 p.m. Luckily I was given a delicious dinner, but there are some nights where I have to fend for myself after a long work day. It's nights like those where it's sooooo tempting to just drop by a fast food restaurant for a quick bite, especially when it's been hours since your last meal. But let's face it: you never feel satisfied after doing that.
Last fall, our friends Kayla and Brian introduced us to the glorious black bean burger. Delicious and quick (with an amazing kick!), these burgers have become a staple in my life. They store in the freezer, only take a few minutes in the oven, and fill me up perfectly. I love topping mine with melted provolone, avocado, and BBQ sauce. Perfection!
