Today was a longer day than usual. I had a volunteer opportunity after work that was due to end around 7 p.m. Luckily I was given a delicious dinner, but there are some nights where I have to fend for myself after a long work day. It's nights like those where it's sooooo tempting to just drop by a fast food restaurant for a quick bite, especially when it's been hours since your last meal. But let's face it: you never feel satisfied after doing that.

Last fall, our friends Kayla and Brian introduced us to the glorious black bean burger. Delicious and quick (with an amazing kick!), these burgers have become a staple in my life. They store in the freezer, only take a few minutes in the oven, and fill me up perfectly. I love topping mine with melted provolone, avocado, and BBQ sauce. Perfection!

Stay tuned, because I've challenged myself to create a homemade version of these. I'm so excited to experiment!

Oh dear, I totally pushed enter on accident and just published my name. Oops. Anyway, what I was going to write was that I have a pretty great recipe for homemade black bean burgers that I would be happy to pass along if you'd like. I also have a recipe for lentil burgers that I like even better.

Liz, you're cute. It's okay, I put the wrong link on my comment. I should definitely know better.

I would LOVE both those recipes. Bean burgers rock my world.

Also, thanks for the kind words about the pictures. It means a LOT coming from you. I drool over your images (it also doesn't hurt that the kiddos are absolutely gorgeous!). It's funny, I took a ton of pictures of these burgers and this is the only semi-decent one. They were too blurry for my liking. I guess I was too focused on actually eating them. :)
